BOONDI LADDU
(BAKERY STYLE RECIPE)
INGREDIENTS
Boondi Prep
- 1 cup besan flour
- 3 drops yellow food color (optional)
- 1/2 cup water
- 1/4 tsp baking soda (optional)
- Oil for deep frying
Sugar Syrup
- 1.25 cup sugar
- 1/2 cup water
Other Ingredients
- 1 tbsp ghee
- 2 tbsp raisins
- 2 tbsp cashew
- 1/4 tsp cardamom powder
DIRECTIONS
1. To prepare the boondi, mix besan and water in a mixing bowl and make a thick/smooth batter. Add yellow food color and baking soda to the batter.
2. Heat the oil in a frying pan. Once the oil is heated, pour in the batter to oil through a skimmer ladle (should have small holes in it). --> TIP: gently stir the batter with a spoon when on the skimmer ladle to let it easily go through the holes. Boondi should not be too crunchy.
3. Next, in a large, thick bottomed kadai pan add 1.25 cups of sugar and 1/2 cup of water and start mixing until all of the sugar has melted.
4. Mix well & allow to boil till you attain a string consistency
5. Once the sugar cools slightly (pour over prepared boondi).
6. Also roast raisins & cashew in 1 tsp ghee.
7. Pour the roasted dry fruits over boondi mixture along with 1/4 tsp cardamom powder
8. When the mixture is slightly warm make medium sized balls and set aside to cool!
