November 2022 - Recipe of the month Boondi Laddu

Boondi Prep 

  • 1 cup besan flour 
  • 3 drops yellow food color (optional
  • 1/2 cup water 
  • 1/4 tsp baking soda (optional
  • Oil for deep frying 
Sugar Syrup 
  • 1.25 cup sugar 
  • 1/2 cup water 

Other Ingredients 

  • 1 tbsp ghee 
  • 2 tbsp raisins 
  • 2 tbsp cashew 
  • 1/4 tsp cardamom powder 


1. To prepare the boondi, mix besan and water in a mixing bowl and make a thick/smooth batter. Add yellow food color and baking soda to the batter.

2. Heat the oil in a frying pan. Once the oil is heated, pour in the batter to oil through a skimmer ladle (should have small holes in it). --> TIP: gently stir the batter with a spoon when on the skimmer ladle to let it easily go through the holes. Boondi should not be too crunchy.

3. Next, in a large, thick bottomed kadai pan add 1.25 cups of sugar and 1/2 cup of water and start mixing until all of the sugar has melted.

4. Mix well & allow to boil till you attain string consistency

5. Once the sugar cools slightly (pour over prepared boondi).

6. Also roast raisins & cashew in 1 tsp ghee.

7. Pour the roasted dry fruits over boondi mixture along with 1/4 tsp cardamom powder

8. When the mixture is slightly warm make medium sized balls and set aside to cool
